These amazing Breakfast Quesadillas are loaded with eggs, ham, a layer of crispy cheese and a layer of soft melted cheese.

How is this possible, you might be wondering? It’s all in the cooking method, my friend. (It’s amazing the things you can learn while scrolling through Instagram Reels in the wee hours of the night, am I right? Man, people are putting out a lot of cool stuff there!)

The trick is to cook the cheese in a not skillet, first. Letting it get nice and crispy.

Then pour your egg mixture over the top and place your tortilla over the top of it. Allow the egg to cook almost completely.

Flip the whole thing over (so the tortilla is face down in the pan), and cover with more cheese, ham and green onions.

Fold it over once the cheese melts…

Cut into triangles and enjoy!

A great, quick meal that has awarded me many thumbs up around here. My teen sons and husband are big fans of these tasty quesadillas. You could all kinds of different ingredients. Bacon, tomatoes, grilled onions and mushrooms, really whatever suits your fancy. So many possibilities with this one, gang. Hope you love it!

Breakfast Quesadillas with Crispy Cheese and Melted Cheese

Ingredients

  • 3 Tb chopped ham
  • 1 Tb green onion
  • 1/4 C sharp cheddar cheese, grated
  • 4 eggs
  • 1 Tb milk
  • seasoned salt (we use Lawry's)
  • smoked paprika
  • salt and pepper
  • 1 large tortilla, burrito sized (or whatever size your pan is)
  • 1/4 C sharp cheddar cheese, grated

Instructions

  1. Chop up your ham and green onions.
  2. Grab a small bowl and whisk together the egg, milk and a dash or two of each of the seasonings.
  3. Heat a medium sized skillet over medium high heat. You want to be sure to choose a pan the same size as your tortilla ;).
  4. Spray with cooking spray and sprinkle 1/4 of the cheddar cheese into the pan. Allow about half of it to get nice and crispy then pour the egg mixture over the top.
  5. Immediately cover with the tortilla. Allow the egg to cook almost all the way through. The tortilla will start to puff up a bit as the egg cooks. Use your spatula to push the side in towards the center to check the cooked egg.
  6. Flip the tortilla over.
  7. Add the remaining cheese, ham and green onions. Allow it to melt just a bit, then fold the tortilla up and over, creating a half circle.
  8. Cut the quesadilla into triangles, serve and enjoy!
