This amazing recipe for Easy Microwave Caramels is so fantastic! The caramels are rich, buttery and have the perfect texture. Not too soft, and not too hard, but perfectly chewy.

As an added bonus, you cook the ingredients together in the microwave for only 10 minutes, stirring well after every 2 minutes. So easy! No candy thermometer needed at all.

I have to admit to making them several times over the past couple of weeks, in preparations for some Christmas gifts I’m putting together.

I also designed a little recipe card. I thought it would be fun to attach it to the bags of caramels I’ll be giving away as Christmas gifts.

Easy Microwave Caramels

Ingredients

  • 1/2 C butter
  • 1 C sugar
  • 1 C brown sugar
  • 1 C light corn syrup
  • 1/2 tsp salt
  • 1 (14 oz) sweetened condensed milk

Instructions

  1. Place all the ingredients in a large microwave safe bowl. I like to use an extra large glass measuring cup (2 quart size). It will bubble up a lot, so make sure you have a big enough container. 
  2. Stir the mixture together.
  3. Cook in the microwave at high heat (I tested the recipe in a 1500 watt microwave) for 10 minutes, taking the container out every 2 minutes and stirring well. Be careful here, your container will get hot. Make sure to use a hot pad. 
  4. Spray a 9x13 pan with cooking spray. 
  5. Pour the caramel into the pan and allow the mixture to cool and set for at least 1 hour. Then cut with a metal spatula, wrap and enjoy! 

Notes

This recipe was tested in a 1500 watt microwave. If you only have a 1000 watt microwave, I suggest cooking the caramel for 12 minutes.
