If you love a good Cheeseburger and a side of Sweet Potato Fries, then this healthy twist on the classic is for you. This yummy recipe has all the elements of a Cheeseburger (except the bun), but deconstructed and put in a bowl. I like to add lots of extra lettuce, tomato and onion…making it kind of like a Cheeseburger salad. 🙂

The delicious ground beef is seasoned perfectly, with ketchup and mustard adding depth of flavor and authenticity.

They are topped with a killer burger sauce and crispy fried onions.

I’m in love with these, and could seriously eat them every day. 😉

Let me show you how to make it happen.

Preheat your oven to 450 degrees. Peel and chop 4-5 medium sizes sweet potatoes. Make sure the pieces are as evenly proportioned as possible and fairly small. This will help them cook more evenly. Line two large baking sheet with foil and spray them generously with cooking spay. Add the sweet potatoes and drizzle each pan with about 1 Tb of olive oil. Toss the sweet potatoes in the oil and spread them out evenly over the sheets. Bake until slightly charred along one side (should take about 30 minutes). About half way through the cooking time, I like to remove the pans from the oven, give them a nice stir and then switch the bottom pan to the top and vice versa. Remove from the oven when the are a bit blackened along one side. Toss with salt, pepper and seasoned salt.

While your sweet potatoes roast, make the yummy burger portion. Dice 1/2 an onion into very small piece. Add the onion and the burger to a large deep skillet, breaking it up with a spatula and cooking over medium high heat. When the mixture is almost cooked through (no longer pink) add the seasoning, ketchup and mustard and stir to combine. Cook for an additional 10 minutes, allowing the burger to brown all the way and simmer in the liquid for just a bit.

While the burger cooks, chop up your lettuce, purple cabbage, red onion, and tomato.
Pour all the burger sauce ingredients into a glass measuring cup and stir to combine.

Set out all the ingredients and let your friends or family dish their own bowl. Drizzle with the sauce, sprinkle with crispy onions and enjoy!

Ingredients

  • ROASTED SWEET POTATOES:
  • 4-5 medium sized sweet potatoes

  • BURGER PORTION:
  • 2 1/2 pounds ground beef
  • 1/2 small onion, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp Montreal Steak Seasoning
  • 1 tsp Seasoned salt (Lawry's if you have it)
  • 2 Tb ketchup
  • 1 Tb mustard
  • SAUCE:
  • 1 C mayo (light or regular)
  • 1/2 C bbq sauce
  • 1 Tb mustard
  • 1 Tb dill pickle juice
  • 1 tsp Seasoned salt
  • TOPPINGS:
  • 1 romaine heart, chopped
  • 3/4 C purple cabbage, cut into thin strips
  • 1 pint grape tomatoes
  • 1/2 red onion, chopped into small pieces
  • sharp cheddar cheese, cut into cubes
  • dill pickles
  • crispy fried onions (usually found on the condiment aisle, or in the produce section)

Notes

These work super well for meal prep. I like to keep the meat and sweet potatoes in one container, so they can be reheated together and then added to the cold toppings and burger sauce.
