The very essence of fall, this delightful salad features crips romaine lettuce, sweet apples, smokey bacon, Swiss cheese and a creamy poppyseed dressing that is the perfect balance of sweet and tart.

I made a batch to take to a family gathering last week and it was the right thing to do. Everyone gobbled it up. Can’t wait to make it again!

Apple Bacon and Swiss Salad with Creamy Poppyseed Dressing

Ingredients

  • 3 romaine hearts, chopped
  • 1/2 red onion, sliced
  • 12 strips bacon, cooked and crumbled (or precooked bacon, cut into pieces and crisped in a fry pan)
  • 7 slices Swiss cheese, cut into small pieces
  • 1 C honey roasted sunflower seeds
  • 2 honey crisp apples, sliced
  • DRESSING:
  • 1/2 C apple cider vinegar
  • 3/4 C sugar
  • 2 Tb white onion, minced
  • 1/2 t stone ground mustard
  • 1 tsp salt
  • 3/4 C mayonnaise
  • 1/4 C orange juice (fresh is best)
  • 1 Tb poppyseeds

Instructions

  1. Place the lettuce into a large salad bowl, or platter. Arrange the other salad ingredients over the top. (It's best to add the bacon and sunflower seeds just before serving).
  2. To make the dressing, place all the ingredients (except the poppyseeds) into a blender and blend until smooth. Add the poppyseeds and stir to combine.ย 
  3. When you are ready to serve pour the dressing over the top of the salad and toss to combine.ย 

Serve and enjoy!ย 

Notes

It's best to add the bacon, sunflower seeds and dressing just before serving.

After more than 40 years of marriage and literally hundreds of salads, my husband said when I made this, “This is one of the best salads you’ve ever made!” Refreshing change from your typical tossed salad, with a tangy dressing. I did substitute honey roasted chopped pecans for the sunflower seeds. This one definitely goes on my Blue Ribbon list. Thanks Jamie!
