Start your day with a crunch! These crispy breakfast burritos are everything you need to kick your morning off, on a deliciously satisfying note. Packed with all your favorite breakfast ingredients, perfectly seasoned potatoes, ham, eggs and cheese all wrapped up and toasted to golden perfection, these burritos are a game-changer for busy mornings or lazy weekends alike.

We’ve been making these frequently this past summer. My teenage sons like to see how much filling they can stuff them with and sometimes even use two large tortilla shells. I guess that’s what a person running a million miles a week needs. 😉

Let me show you how to make it happen!

I like to start with deli ham and a package of Potatoes O’Brian. No need to cut fresh potatoes, here. These frozen ones work great. Be sure to chop your ham up into small pieces.

Pop the bag of potatoes into the microwave for 3-5 minutes, just to defrost them a bit. Heat a large deep skillet up over medium high heat. Add 2 Tb butter and allow it to melt. Add the potatoes, salt, smoked paprika and garlic salt. Stir to combine and cook until golden brown along the outside of the potatoes.

Add the ham to the potato mixture and allow it to sear a bit along the bottom, creating more flavor, then stir the whole pan together to combine.

Place the eggs, milk, salt and pepper into a medium sized bowl and whisk until frothy and combined. Heat a large (separate from the potatoes and ham) skillet up over medium high heat and spray it well with cooking spray. Add the egg mixture and allow them to cook, stirring as they heat up and become nice and scrambled.

Add some scrambled egg to each tortilla, top with the potato and ham mixture and a sprinkle of cheese. Make your burritos! Fold two opposite edges into the center, then start at the bottom and roll them each up.

Heat another skillet up over medium high heat and add a bit of oil to the pan. Allow it get hot and then place the rolled up burritos into the oil. Let them get nice and golden brown along the bottom, then using a pair of tongs, carefully turn them over to brown them on the other side.

I like to get them a bit brown along the sides as well.

We love to dip them into some salsa, or drizzle a bit of BBQ sauce over the tops.

Ingredients
