This delicious Caprese Breakfast Casserole is the perfect blend of fresh, vibrant flavors and hearty, satisfying ingredients—ideal for busy mornings, lazy weekends, or even a special brunch gathering. Picture this: fluffy eggs baked to perfection, layered with juicy cherry tomatoes, fresh basil, and gooey melted mozzarella cheese. The casserole comes together quickly—it really only takes about 10 minutes to assemble. Once it’s out of the oven, finish it off with a drizzle of balsamic glaze for that classic Caprese touch and an extra pop of flavor.

Ingredients
- 1 Tb olive oil
- 1/2 onion, minced
- 1 tsp garlic minced
- 18 eggs
- 1/3 C half and half
- 3/4 tsp salt
- 1/4 tsp pepper
- 1 tsp Italian seasoning
- 2 C grape tomatoes, halved
- 2 C mozzarella cheese, shredded and divided
- 1 C fresh basil, roughly chopped
- Optional:
- Balsamic Glaze
- more fresh basil
Instructions
- Preheat your oven 350 degrees.
- Heat a medium sized skillet up over medium heat. Add the oil and allow it to heat through. Add the onions and garlic and cook for 2-3 minutes, stirring frequently until the onions are translucent.
- Place the eggs into a large mixing bowl and whisk vigorously until they are well combined. Add the half and half, salt, pepper and Italian seasoning and whisk them in to combine.
- Add the cooked onions and garlic and stir to combine.
- Add the tomatoes, 1 1/2 cups of the mozzarella cheese and basil. Stir gently to combine.
- Spray a 9x13 pan with cooking spray and carefully pour the mixture into the pan. Make sure that the tomatoes and basil are evenly spread.
- Sprinkle the remaining 1/2 cup of mozzarella cheese over the top of the egg mixture.
- Bake for 45-60 minutes, or until the eggs are set and cooked through.
- Allow the pan to rest on the counter for about 10 minutes, then cut into squares and serve.
- Top with a drizzle of balsamic glaze and more fresh basil. (Optional, but so wonderful.)
