These delicious Beef Tacos have all the fabulous flavor of a standard taco, but are made tremendously more delicious by heating the tortilla in a warm pan, searing it slightly on both sides, then adding the cheese and meat, folding over the top of the tortilla to make a super tasty, slightly crispy taco of wonder, my friends.
Yes, a taco of wonder. 🙂
It’s kind of like a grilled cheese, but in taco form.

We seriously eat a version of these tacos a couple times a month, they are so good and so fast.

You can dip them in salsa, or guac, or sour cream or just eat them plain.


Yum!

Ingredients
- TACO MEAT: (This will make more than you need, but it freezes super well)
- 3 pounds ground beef (I like 93% lean, 7% fat)
- 1/2 C yellow or white onion, minced
- 1 T garlic, minced (bottled works great)
- 2 (15 oz) cans diced tomatoes (with juice)
- 2 Tb Kinder's Woodfired Garlic Seasoning (pictured above)
- 2 Tb taco seasoning (I like McCormick)
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp oregano
- 12 corn tortillas
- 1-2 C sharp cheddar cheese, grated
- sour cream, guacamole, salsa
Instructions
- Grab a large, deep skillet and heat it over medium high heat.
- Add your ground beef, onion and garlic. Break up the meat with a spatula and cook until it's no longer pink and has browned up nicely for you.
- Add the canned tomatoes (with the juice), and all of the seasonings. Stir well to combine and allow the mixture to come to a simmer. Grab the lid to the pan and cover it half way, allowing some of the steam to escape, but covering enough of the pan the the juices don't hop out of the pan.
- Let it cook for about 15 minutes, stirring occasionally.
- Heat a griddle (or a separate large skillet) up over medium high heat. Add a generous amount of cooking spray to the pan and place your tortillas on top. Sprinkle them with a bit of salt and spray the tops with cooking spray. Allow them to sear along the bottoms, them flip them over.Â
- Add cheese and meat to one side of each of the tortillas, sprinkle with a bit more cheese and fold each tortilla over. Make sure both sides get slightly crispy and the cheese on the inside melts.Â
Serve with sour cream, guacamole and salsa and enjoy!
