If you are looking for a quick and easy way to get a meal on the table for your family, this is it! Golden hash brown potatoes are cooked right in the skillet until crisp on the edges, tender on the inside, and seasoned perfectly with just the right blend of savory spices. Once the potatoes are ready, the eggs are cracked right over the top and gently cooked until the whites are set and the yolks are just how you like them—runny, jammy, or fully cooked. Everything comes together in one pan, making cleanup easy and breakfast feel effortless. It’s hearty, comforting, and perfect for slow mornings, busy weeknights, or anytime you want a classic, no-fuss meal that everyone loves.

This past week, my family and I were down with some kind of winter bug. Good times, right? When we emerged from our sick beds, this is the first things I made. We needed something hearty and quick and this simple meal was just the thing.

Ingredients
- 1 (26 oz) bag frozen shredded potatoes
- 2 Tb butter
- 1/2 C onion, diced
- 1/2 C bell pepper, diced
- 1 tsp Lawry's seasoned salt
- 1/2 tsp garlic powder
- 1 tsp Kinders Woodfired Garlic Seasoning (easy to find, at your local grocery store)
- 6 eggs
- salt and pepper to taste
Instructions
- Grab your bag of frozen potatoes, and pop them in the microwave for a few minutes to thaw.
- Heat a large deep skillet up over medium high heat. Add the butter and allow it to melt.
- Add your diced onions and bell pepper. Sautee for a few minutes. No need to cook them all the way through at this point, just get them started.
- Add your thawed potatoes right into the pan. Give everything a nice stir and add the Lawry's Seasoned Salt, garlic powder and Kinders Woodfired Garlic Seasoning.
- Allow the potatoes and veggies to cook, stirring occasionally, until slightly crisp on the bottom and tender on the insides.
- Take a fork and make 6 small wells in the mixture. Crack an egg into each of the wells and sprinkle with salt and pepper.
- Cover the pan and reduce the heat to low. Allow the eggs to cook to your desired done-ness. 🙂 I like my yolks to be a bit runny, and that usually takes about 5-7 minutes of cooking with the lid on.
- Remove the pan from the heat, serve and enjoy!
