Loaded with hearty oats, creamy peanut butter, honey, flaxseed, chia seeds, and just enough mini chocolate chips to satisfy a sweet tooth, these easy no-bake protein bites come together in minutes. They’re perfect for lunch boxes, after-school snacks, busy mornings, or whenever you need a little boost of energy.

Ingredients

  • 1 C ground flaxseed
  • 1/3 C chia seeds
  • 2 C quick cooking oats
  • 4 scoops vanilla protein powder
  • 1/8 tsp salt
  • 1/2 C mini chocolate chips
  • 1/2 C mini chocolate chips
  • 1 C creamy or chunky peanut butter
  • 1 C honey
  • 2 Tb coconut oil

Instructions

  1. Pour all the dry ingredients into a large bowl and toss together to combine.
  2. Into a large glass measuring cup stir together the peanut butter, honey and coconut oil. Pour it into the large bowl with the dry ingredients and stir together to combine.
  3. Scoop the mixture into balls and place them on a large cookie sheet lined with parchment paper. Spray your hands with cooking spray and roll the balls in your hands until the outsides and nice and smooth.
  4. Cover and refrigerate for 1-2 hours or until firm.
  5. ย Once they are chilled, you can serve them or store them in a ziploc bag in the fridge for up to a week or in the freezer for several months.
