I have a super easy (like 5 minutes prep kind of easy) rice recipe for you all today. You literally just open up your rice cooker, add all the ingredients, close the lid and set it to cook. Doesn’t that sound fantastic. 😉
This little treasure has been one of my go-to’s lately when I need a quick grain to fill out a meal. I like to make a big batch and then use it throughout the week. It’s got great flavor and is fabulous served with all kinds of Mexican food. We have it with Taco Salad, on Crispy Beef and Bean Burritos, or as a side to a Nacho Bar. It would also be wonderful with Mexican Shredded Beef.

Ingredients
- 2 C long grain rice
- 4 C water
- 4 tsp chicken bullion
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp smoked paprika
- 1/2 tsp tajin (see picture above)
- 1-2 Tb butter (optional)
Instructions
- Grab your rice cooker.
- Pour in the rice.
- Combine the water and bullion and pour over the top.
- Add the spices, close the lid and cook on the "White Rice" setting.
- When it beeps, give the rice and nice stir and add the butter (optional) and serve.
