Boy, do I have a fabulous Grilled Sandwich to share with you today. My family and I have been making a type of these sandwiches for years. The combination of turkey, provolone and pesto are a trio made in heaven if you ask me. I’ve had my adult daughters staying with me off and on this summer and we’ve had them on replay.
Look at all those delightful ingredients!
You’re going to mix equal parts pesto and mayo for the sauce. Super easy.
Layer up some cheese, turkey, tomato, sprouts, avocado and red onion. Delicious!
There’s lots to love, my friends. I’ve even developed a gluten free version for myself to enjoy. (Watch for a post coming soon to highlight that treasure of a meal).
Ingredients
- 1/2 C fresh basil pesto (I buy mine at Costco or Sam's Club)
- 1/2 C mayonnaise
- 8 slices white bread (Grandma Sycamore's actually works really well)
- 3-4 Tb butter, softened
- 8 slices provolone cheese
- 2-3 tomatoes, sliced
- 1 small red onion, sliced
- sprouts
- 2 avocados, cut into slices
- 1/2 pound deli turkey meat
Instructions
- Mix the pesto and mayo together in a small bowl.
- Spread the softened butter on one side of all 8 pieces of bread.
- Spread the pesto mixture on the other side of each piece of bread.
- Add a piece of cheese to each piece of bread, over the top of the pesto.
- One one side of the sandwich, layer tomato, red onion and sprout.
- On the other side layer the avocado and turkey.
- Carefully place both halves of the sandwich together.
- Heat a large skillet up over medium low heat and place each sandwich, butter side down, into the pan.
- Cover the pan (this will allow for the cheese to melt quickly while the bread grilles and caramelizes). Be careful to watch it closely and flip the sandwiches over when the bottom side is golden brown.
- Allow the other side to caramelize and get golden. Remove the sandwiches to a cutting board.
- Cut and enjoy!
