Ready in just minutes, this delightful, easy tomato and fresh mozzarella toast has a layer of fresh pesto that gives it just the right enhancement of flavor. It’s so, so good!

Start with sour dough bread and lightly toast it.

Spread some fresh pesto on top, then layer the fresh mozzarella, tomatoes and basil.

Hit it with some salt and pepper and a drizzle of balsamic glaze and you are going to be in heaven, my friends.

I buy my pesto at Costco or Sam’s Club and the Balsamic Glaze at pretty much any grocery store.

Ingredients

  • 1 thick slice sour dough bread, cut in half and toasted
  • 1 Tb fresh pesto (I buy mine at Costco or Sam's Club)
  • 4 slices fresh mozzarella cheese
  • 2 medium sized tomatoes, sliced
  • 2-3 fresh basil leaves, torn into pieces
  • salt and pepper
  • balsamic glaze (I like Bertolli, found at most grocery stores)

Instructions

  1. Toast your bread.
  2. Spread the pesto on top.
  3. Add the mozzarella cheese, tomatoes and ripped basil leaves.
  4. Sprinkle with salt and pepper and drizzle with some balsamic glaze.

Eat immediately, enjoy!
