Oh, if I could do anything to convince you to try this amazingly fresh tasting salad…I would do it. I had something similar at a church gathering last week and had to come home and see if I could recreate it and put my own spin on it. Please believe me when I tell you I’ve eaten a form of this salad nearly every day for a week.

The fresh peaches are the star of the show, especially this time of year when they are so glorious and in abundance.

Paired with peppery arugula, sweet raspberries…

… and roasted pistachios, it is a salad not to be missed.

Can we talk about Burrata Cheese? It’s a form of fresh mozzarella with a soft center that is heavenly. I’m a big fan, though it was a little bit hard to find. I found it at Smiths (Kroger) but have seen it at Walmart and Sams Club as well. You can easily substitute feta cheese, if you prefer a more potent, salty cheese.

I put together this fantastic Creamy Poppyseed Apricot Dressing that my family loved. If you are sensitive to added sugar, like me ;), rest assured the salad is just as fabulous with olive oil and balsamic vinegar. Or you could try this great Skinny Girl Poppyseed Dressing.

As an added bonus, you can put it all together in about 15 minutes. That is something to be happy about, truly. I hope you love it, my friends. It’s pretty, healthy, and tastes delightful. Happy September and peach season to all of us.

Peach Arugula and Burrata Cheese Salad

Ingredients

  • 7 C spring mix
  • 4 C arugula
  • 5 fresh peaches, peeled and sliced
  • 1 pint fresh raspberries
  • 1/2 C roasted pistachios
  • 2-3 balls Burrata Cheese
  • DRESSING:
  • 6 Tb apricot or peach jam
  • 1/2 C mayonnaise (I used Best Foods Light)
  • 1 Tb Dijon mustard
  • 1/2 C sugar
  • 6 Tb white wine vinegar
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1 Tb poppyseeds

Instructions

  1. Grab a large salad platter and layer the spring mix and arugula over the top. 
  2. Dot the greens with the raspberries, peaches and pistachios.
  3. Gently cut each of Burrata Cheese balls into 4-5 pieces and set them out over the salad. 
  4. To make the dressing, place all ingredients in a large glass measuring cup and blend until creamy with an immersion blender. Or, use a regular blender if that's what you have. Add the poppyseeds and stir to combine.

Serve and enjoy!
