These fantastic muffins are a creation by MyHandsomeHusband and are fabulous in every way. They are tender and moist, dotted with craisins, apples and almonds and have a delicious homey flavor.

We usually sprinkle a bit of granola on top, but that is optional. They are great with or without it.

They are fantastic for breakfast, snacking or as a side for lunch or dinner.

The trick to making them nice and round on top is to not overmix. Carefully stir the ingredients just until mixed.

They are so good!

Apple Cinnamon Bran Muffins

Ingredients

  • 2 1/2 C raisin bran cereal
  • 1 3/4 C milk
  • 2 eggs, whisked
  • 1/4 C melted butter
  • 2 tsp vanilla
  • 1 medium apple, cored, peeled and chopped
  • 1/2 C craisins
  • 1/2 C sliced almonds
  • 1 1/2 C flour
  • 1/4 C sugar
  • 1/4 C brown sugar
  • 1/2 tsp salt
  • 1 Tb baking powder
  • 1 1/4 tsp cinnamon
  • 1 C granola (optional)

Instructions

  1. Preheat your oven to 350 degrees. 
  2. Pour the raisin bran into a medium sized mixing bowl and pour the milk over the top. Allow it to sit for about 10 minutes while you prepare the other ingredients. You are looking for the cereal to soften nicely. 
  3. Chop up your apple and measure out your craisins and almonds. 
  4. Into a separate small mixing bowl, combine the flour, sugar, brown sugar, salt, baking powder and cinnamon. 
  5. Add the whisked egg to the soaked cereal and stir to combine. Add the melted butter, vanilla, apple, craisins and sliced almonds. Stir well to combine. 
  6. Gently fold in the dry ingredients. Mix only until combined. You don't want to over mix here. 
  7. Line your muffin tins with cupcake wrappers (you'll need about 18) and spray them with cooking spray. 
  8. Fill each muffin tin 2/3rds of the way full and sprinkle with a bit of granola. 
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
