If you are looking for a cozy, quick, nourishing meal or snack that serves just one wonderful human, look no further. This amazing Banana Bread Oatmeal is loaded with wholesome nutrients and fabulous flavor.

Grab a large glass measuring up (mine is the 4 cup size), place half a banana in the bottom and mash it all up. Add your oats, and your milk of choice. My favorites are Coconut or Almond milk, but regular dairy milk works great too.

Add a bit of cinnamon, dash of salt, splash of vanilla and your favorite sweetener (honey, maple syrup, brown sugar or even a packet of truvia, the later being what I usually use) and stir it all to combine. Cook in the microwave for 3 minutes…

Then top with the other half of the banana, chocolate chips and sliced almonds. I’ve been known to add a splash of coffee creamer on as well. So good. You can really add whatever toppings you like. If you are looking for lower calorie, try adding fresh berries and a dollop of yogurt on the side instead of the chocolate chips and almonds. So many great options with this basic recipe, my friends.

Ingredients

  • 1 ripe banana, divided
  • 1/2 C oats (I use regular, old fashioned)
  • 3/4 C milk of choice (almond, coconut or regular dairy milk)
  • 1 Tb chia seeds
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • dash salt
  • 1 Tb sweetener of choice (honey, maple syrup, brown sugar or a truvia packet)
  • Toppings:
  • chocolate chips
  • sliced almonds
  • zero sugar coffee creamer (coconut, cinnamon roll, or vanilla are all fabulous)

Instructions

  1. Grab a large glass measuring cup and drop half of the banana into the bottom. Smash it up with a fork.
  2. Add all the other ingredients (except the toppings and the other half of the banana) to the measuring cup and stir to combine.
  3. Heat in the microwave on high for 3 minutes.
  4. Grab a rubber spatula to transfer the cooked oats to a cereal sized serving bowl.
  5. Top with the rest of the banana, chocolate chips, sliced almonds and a splash of coffee creamer.
