These Crispy Chicken Griddle Tacos take flavor and texture to the next level! Cheese is melted directly onto a hot griddle, then topped with corn tortillas that soak up all that golden, crispy goodness. A savory, seasoned chicken mixture is added before folding the tortillas in half and grilling until crisp and golden on both sides. Melty, cheesy, and perfectly crunchy—these tacos are an easy weeknight dinner your whole family will love!

Place your rotisserie chicken in a large microwave safe bowl. Add the salsa, honey, lime juice and taco seasoning. Toss it together to combine. Cover the bowl with plastic wrap and heat in the microwave for 2-3 minutes to warm the mixture. Give it a nice stir.




Heat a large deep skillet up over medium high heat and sprinkle cheddar cheese onto the pan in three separate mounds. Allow the cheese to melt and get slightly crispy. Quickly, place a tortilla over each cheese mound, sprinkle with more cheddar cheese and spoon 2-3 Tb of the chicken mixture onto the tortilla. Fold the tortillas over and allow the inside cheese to melt through.


Serve with salsa and sour cream.
