This fabulous Ham Fried Rice has been a staple at my house for years. Recently MyTwinSonNate asked if he could make it. I thought I’d take some pictures to refresh the recipe here for you all. I’ve also added some adjustments to a few ingredients that my kids tell me, gives it a lot more flavor. My son actually enjoyed making it so much, he made it 3 times in a week! It’s a keeper, my friends. Hope some of you get a chance to try it!
Ingredients
- 2-3 Tb olive oil, divided
- 1 1/2 Tb sesame oil, divided
- 1/2 C minced onion
- 1 Tb minced garlic
- 1 C minced carrots
- 3 C ham, chopped
- 4 C cooked rice
- 4 eggs + salt and pepper
- 2 C frozen peas
- 1/2 C green onion, chopped
- 2 Tb soy sauce
- 1/2 tsp onion powder
- salt and pepper to taste
Instructions
1.Heat a large skillet over medium high heat. Add 1 Tb olive oil, 1 Tb sesame oil, the onion, garlic and carrots. Cook and stir until the onions are translucent and the carrots are soft.
2. Add the ham, cook and stir until some of ham has a nice char to it.
3. To the corner of the pan add another Tb of olive oil. Add the rice. Cook and stir until it's heated through.
4. In a small bowl, whisk 4 eggs together until frothy and season with salt and pepper.
5. Slide the rice mixture to the side of the pan leaving a nice blank space for the egg. Carefully pour the egg into this space and allow it to cook along the bottom. Scrape the cooked portion around a bit allowing for the rest of the egg to cook. (This is just as simple as making scrambled eggs, everyone. No stress here.)
6. Stir the rice mixture and cooked egg together.
7. Add the green onion and frozen peas. (Don't worry about the peas being cold. They will heat through as they are stirred in. Adding them frozen helps them not become overcooked.)
8. Pour in the soy sauce, onion powder and an additional 1/2 tsp sesame oil and stir to combine.
9. Give it a taste and add salt and pepper to your liking. 10. Serve and enjoy!
