These simple roasted potatoes are packed with flavor and come together in less than 30 minutes. They keep well in the fridge for up to a week, and come in super handy if you are prepping individual meals to freeze. My family loves them and can often be seen eating them right off the pan.

Sheet Pan Smokey Potatoes

Ingredients

  • 2-3 pounds Yukon gold potatoes
  • cooking spray or 1 Tb olive oil
  • 1 tsp garlic salt
  • 1 tsp smoked paprika
  • 1 tsp parsley, dried

Instructions

  1. Preheat your oven to 450 degrees.
  2. Wash and cut the potatoes into inch sizes cubes. No need to peel them, unless you are substituting russet potatoes, then please peel them. 🙂 
  3. Place them into a gallon sized zip loc bag. Close the bag, leaving about an inch or so of the bag open to allow for steam to escape. Heat on high in the microwave for 5 minutes. This gives the potatoes a head start with the cooking process and will keep the center of the potatoes soft while the oven works to crisp the outsides. 
  4. Line a large sheet pan with foil and spray it generously with cooking spray. 
  5. Pour the steamed potatoes out onto the foil. Spray them generously with cooking spray or drizzle the olive oil over the top and stir well. 
  6. In a small bowl combine the seasonings and sprinkle over the top of the potatoes. 
  7. Place the pan in the oven and bake for 15-20 minutes or until the potatoes are golden brown and crispy on the outside. 
  8. Serve immediately and enjoy!
