I can’t possibly say enough good things about these amazing, perfectly seasoned Crispy Carrot Fries. I’ve made them twice in the past 3 days, they are that good.
You’ll want to be sure to start with large carrots, they pack the most flavor absolutly.
Cut them into thin sticks, trying your best to make them as uniform as possible so they cook evenly.
Coat with just a bit of cornstarch…
and a few basic pantry seasonings and a generous amount of cooking spray (no need to add oil)…
…then roast them to perfection in a hot oven. So simple! So good! So healthy!
They would be perfect served with the Instant Pot French Dip Sandwich recipe I renewed and brought to the top of the pile this week.

Ingredients
- 2 pounds large carrots
- 2 tsp cornstarch
- 1 tsp rosemary, dried
- 1 tsp garlic salt
- 1 tsp thyme, dried
- 1 tsp smoked paprika
Instructions
- Preheat your oven to 450 degrees.
- Peel your carrots and slice them into thin strips
- Toss them with the cornstarch, rosemary, garlic salt, thyme and smoked paprika.
- Line 2 large baking sheets with foil and spray with cooking spray.
- Pour the seasoned carrots out evenly over the sheets.
- Spray generously with cooking spray.
- Bake for 25 minutes, or until crisp tender.
Serve and enjoy! They keep for several days in the fridge.
