Ingredients

  • 2 pounds Yukon Gold potatoes
  • water
  • 1/2 C half and half or whole milk
  • 6-8 Tb butter
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • parsley (optional)

Instructions

  1. Set your butter and half and half out on the counter. It helps the potatoes achieve a creamy texture if they are added at room temperature, instead of super cold.
  2. Peel and chop your potatoes into 1 inch cubes. It helps them cook more evenly if they are similar in size.
  3. Place them in a medium sized pot and cover with hot water.
  4. Bring to a boil and cook for about 20 minutes, or until they are fork tender.
  5. Drain the water from the potatoes.
  6. Add the half and half, butter, salt and pepper.
  7. Use a electric beater to mash and whip the potatoes until soft and fluffy. Give them a taste and add more salt and pepper to your liking.
  8. Serve with several pats of butter on top and a sprinkle of parsley.

They are fabulous with these BEEF TIPS and GRAVY (INSTANT POT).
