If you are looking for a quick pumpkin fix that is equal parts healthy and delicious…look no further. Ready in just minutes, it’s warm, cozy, full of pumpkin flavor and fall spices and will put a smile on your face.

If you love breakfast oats (like I do!) here are a few others you might enjoy.



Ingredients
- 1/2 C rolled oats (I use old fashioned)
- 1/2 C almond milk
- 2 Tb pumpkin puree (from a can)
- 1/2 tsp vanilla
- 1/4 tsp pumpkin spice
- 1 Tb flax seeds
- 1 Tb chia seeds
- 1 Tb sugar (or 2 pkgs Truvia, or other sweetener of choice)
- TOPPINGS:
- semi sweet chocolate chips
- pecans
- coffee creamer or more almond milk
Instructions
- Grab a large glass measuring cup (I use the 4 C size) and pour in all the ingredients (except the toppings). Stir well to combine.
- Heat in the microwave for 3 minutes.
- Use a rubber spatula to scoop the cooked mixture into a small soup or cereal bowl. Top with chocolate chips, pecans, and coffee creamer (or more almond milk).
