10 Rotisserie Chicken Recipes

I love a good rotisserie chicken. They make dinner time so easy! They are by far the most moist, delicious and economical at Costco. I hardly ever go there that I don’t buy one. However, often when I get home I end up scratching my head and thinking “All right, now what am I going to make with that pretty bird? There are a lot of great recipes on the blog…where…are…they…hm….”

And so, I decided to put 10 of my favorite Rotisserie Chicken Recipes in one convenient spot. For me, and for any of you who might enjoy that kind of thing. I will be adding a picture link to this post along my sidebar for easy access as well.

You are so right! Costco’s rotisserie chicken is the BEST!!

I usually go to Sam’s Club and get the rotisserie chickens there. I buy two, remove all the meat from the bones. I then freeze the meat in recipe size portions. The bones and skin from two chickens makes a nice crock pot full of broth when cooked with carrots, onions, bay leaves and celery. Then I freeze the broth in recipe size portions. What a lot of meals from two chickens!

I have also used rotisserie chicken for quick chicken recipes in the past. But for the price of one 2 1/2 lb. rotisserie chicken I can buy a 6 lb. whole chicken and roast it in my oven in my 12 inch cast-iron skillet. It is easy, and removing the meat is just as easy. It makes a LOT more shredded chicken too. I shred it and bag it by weight in recipe portions. Then I freeze it. It thaws quickly and is ready to be turned into a tasty meal.
