I get a lot of emails with requests for freezer meals ideas. A couple of years ago I published a post titled 35 Freezer Safe Recipes with links to 35 different recipes that can be frozen. (obviously!) It is a full list, including casseroles, soups, breads and even cookie dough with a lot of instructions on how to go about freezing food. Today, I thought I would share with you a smaller list (but still wonderful) of just dinner recipes that can be made ahead of time and frozen for later use. Most of these are recipes that have been posted in the two years since my original “freezer” post and I felt it might be beneficial to bring them to your attention. I have also added a picture link along my sidebar that will connect you with this post for future reference.

IMG_7984Creamy Chicken Enchilada Casserole

To freeze, assemble the casserole as directed in the instructions but before baking cover it tightly with foil and freeze. When you are ready to use it, thaw completely and bake as directed.

DSC01756Chicken Stuffed Crescent Rolls (Chicken Puffs!) 

To freeze, follow the recipe instructions for the stuffed rolls completely…assemble and bake them as instructed. Allow them to cool and then carefully place them in freezer safe zip loc bags. When you are ready to use them, remove them from the bag and pop them into either the microwave for 2-3 minutes or put them in a 350 degree oven for 10 minutes or so until they have heated through. The sauce doesn’t hold up to freezing very well. It’s best to make it fresh when you are ready to serve.

This is a great recipe for teenagers (or starving college students) to put together. Super easy, super yummy.

Meatball Marinara

This is actually a crock pot recipe. However, you can assemble all of the ingredients as instructed, but instead of placing it in the crock pot carefully pour it into a deep 9×9 aluminum pan, cover with foil and pop it into the freezer. When you are ready to use thaw and bake for 1 hour at 350 degrees.

Cook the soup according to recipe instructions. Allow it to cool and store it in a gallon sized freezer safe ziploc bag. Lay it flat inside your freezer and you are good to go.

Cook according to recipe instructions. Allow it to cool and then place in a deep 9×9 aluminum foil pan and cover tightly with foil. When you are ready to use is allow it to thaw completely and then bake at 350 just until its heated through. Should take about 30 minutes. I would suggest making the rice fresh, when you are ready to serve.

Cheesy Ham and Chicken Casserole Jamie Cooks It Up!!Cheesy Ham, Chicken and Wild Rice Casserole 

Assemble according to recipe instructions, but don’t bake it. Cover the pan tightly with foil and freeze. When you are ready to use it, thaw completely and bake uncovered at 350 degrees for 30-40 minutes.

Lasagna CasseroleLasagna Casserole

To freeze, assemble the casserole as directed in the instructions but before baking cover it tightly with foil and freeze. When you are ready to use it, thaw completely and bake as directed.

The lastCrispy Cheddar Chicken 

Assemble the chicken according to recipe instructions, but don’t bake it. Cover your pan tightly with foil and freeze. When you are ready to use it let it thaw completely and then bake at 400 degrees for 35 minutes. It’s best to make the sauce fresh, when you are ready to eat.

Assemble according to recipe instructions, but don’t bake it. Cover your pan tightly with foil and freeze. When you are ready to use it allow it to thaw completely and then bake at 350 for 30-40 minutes.

Assemble the meatballs and cook them according to recipe instructions. Place them in a deep 9×9 pan and cover with foil. When you are ready to use them thaw completely. Pour 1/2 cup beef broth over the meatballs and bake, covered at 350 for 20 minutes or until heated through.

Assemble the casserole according to recipe instructions, but don’t bake it. Cover tightly with aluminum foil and freeze. When you are ready to use, allow it to thaw completely and bake at 350 degrees for 45 minutes.
