If I could do anything in my power to convince you to make this amazing Fruit Pizza, I would do it my friends. Not only is it stunning to look at…not only will it produce many servings to feed a crowd of your hungry friends, family and neighbors, but it tastes so fantastically wonderful you will think you have died and gone to heaven, truly. The sugar cookie crust is slightly crispy along the bottom while remaining soft and chewy in the middle. The frosting is both silky and creamy and the delightful fruit gives it a splendid burst of fresh flavor.

I made a pan last week and took it along to my mom’s house to share with my parents and a couple of my siblings. We nearly passed out from its deliciousness. Truly, friends. If you only try one new recipe this summer…let it be this! Sheet Pan Fruit Pizza for the win. Woot! Woot! Let me know if you make it and I’ll be right over…

Ingredients
SUGAR COOKIE CRUST:
1 C butter, softened
1 3/4 C sugar
2 eggs
2 tsp vanilla
2 3/4 C flour
1/2 tsp baking powder
1/2 tsp salt
FROSTING:
12 ounces cream cheese, softened
8 Tb butter, softened
1 tsp vanilla
2 C powdered sugar
milk as needed
FRUIT:
strawberries, raspberries, blueberries, kiwi
Instructions
1. Preheat your oven to 350 degrees.
2. Into your stand mixer place the butter and sugar. Cream together for 2-3 minutes.
3. Add the eggs and vanilla and beat for an additional 2-3 minutes or until light and fluffy.
4. In a separate bowl toss together the flour, baking powder and salt. Add these dry ingredients to the creamed mixture. Mix until combined.
5. Spray a large sheet pan (mine is 11x16) with cooking spray and carefully press the dough into the pan. The dough is kind of sticky, so be aware. I ended up spraying my hands with cooking spray and using them to press the dough into the pan.
6. Bake for 15-17 minutes, or until golden brown. Make sure not to over bake.
7. Allow the pan to cool completely.
8. To make the frosting, cream together the cream cheese and butter until smooth. Add the other ingredients and mix until silky. Add a bit of milk if it's too thick.
9. Spread the frosting over the top of the cooled sugar cookie crust and layer with beautiful fruit slices.

This is my favorite fruit pizza recipe..so easy! As a Health & Wellness coach, I am always looking for ways to make my favorites more healthy so here are my subs for yours. I make mine sugar free by using Monk Fruit, also use half butter half coconut oil, instead of milk I add some creme fraiche and last time added a little almond extract to the vanilla for the dough…YUMMY! For large groups or potlucks, I make it in sheets and precut then decorate individual servings with the fruit..so pretty!
I made 2 sheet pans for an event serving approximately 60 people. It was a huge hit. People loved it and it was something out of the ordinary… I used to make a small, round fruit pizza years ago with store bought sugar cookie tube sliced and baked. There is no comparison to this wonderful crust! Itโs so easy and delicious! I will keep this recipe handy.

I made it to bring to a barbecue a few weeks ago and it was delicious! And a big hit! Sunday, Iโm going to another gathering hosted by a couple who were at the previous barbecue and they asked me if I would bring the fruit pizza for dessert! I will be making it again! Lol. It was great!
