I have a super simple side dish of wonder, for you all today everyone as part of my weekly 15 MINUTE RECIPE SERIES. To see past posts click HERE. I’ve been on the hunt for more side dish recipes that are easy to prepare and super healthy. After nearly 14 years of food blogging, this pile of recipes is loaded down with a lot of variety yet is a bit slim in the “healthy side dish” category. This fabulous recipe for Green Beans with Parmesan and Lemon Pepper is a great addition and one I hope you will find useful as you plan out meals for yourself and your families. My people loved these buttery, flavorful green beans, and I have to admit to making them a couple of times this past week. Good thing they fall into the healthy category, right?

We had them with the 15 Minute Buffalo Chicken recipe I posted a few weeks back.

To make the process go more quickly, you’re going to look for fresh green beans that have already been trimmed and washed. Then take a pair of sharp kitchen scissors and cut them into thirds…

…and place them in a large microwave safe bowl. Add a bit of water to the bottom of the bowl, cover with plastic wrap and pop them in the microwave for 10 minutes.

Carefully uncover and hit them with some butter, lemon pepper, dill, onion salt and some grated parmesan cheese. I opted for the Kraft variety because it coats the beans so well. You could certainly choose to grate your own fresh from a parmesan block as well. Both options are great!

Simple Green Beans with Lemon Pepper and Parmesan

Ingredients

  • 2 pounds fresh green beans, washed and trimmed
  • 2 Tb water
  • 2 Tb butter
  • 1 tsp lemon pepper
  • 1 tsp dill
  • 1/2 tsp onion salt
  • 2 Tb parmesan cheese
  • salt and pepper to taste

Instructions

  1. Take a sharp pair of kitchen scissors and cut the green beans into thirds, dropping them into a large microwave safe bowl.
  2. Add the water and cover the bowl with plastic wrap. Heat in the microwave for 10 minutes.
  3. Remove the bowl from the microwave and carefully unwrap the bowl, be careful not to burn yourself on the steam that will escape. 
  4. Add the rest of the ingredients and stir to combine. Give them a taste and add more salt and pepper to your liking. 

Serve and enjoy!
