HUMMUS BOWL with ROASTED and FRESH VEGGIES
These yummy hummus bowls are one of my favorite mini meals to put together when I’m in a hurry. I try to roast a pan of veggies each week to keep in the fridge and pull out as needed. Roasted Carrots or Roasted Peppers, Onions and Zucchini are a great addition to these hummus bowls. The fresh veggies as a nice crispy texture. I top it all with with feta cheese and the Greek seasoning pictured above. So easy, so good!
