I’m always on the lookout for ways to make fast, healthy and delicious meals for my family and this fabulous Mediterranean Frittata meets that trifecta head on.

I made it on a whim a few weeks ago and snapped a few pictures along the way so I could share it with you. I’m new to making Frittatas, and can’t wait to try more flavor combinations. So easy, so good!

You start by sauteing veggies that have been chopped into small pieces. I used zucchini, onion, mushrooms, spinach and marinated artichoke hearts for this frittata. Can I just tell you that the marinated artichoke hearts were the star of the show. They brought so much delicious flavor.

The egg, milk and feta cheese mixture gets poured right into the pan…

…and everything is topped with more feta.

The pan goes directly in the oven for about 15 minutes and is baked to perfection. The texture is fabulous and hearty, is not overly spongy and has a subtle creaminess to it.

We topped ours with some fresh grape tomatoes. It was the right thing to do. Hope you get a chance to try it. My family gave it many thumbs up. 😉

Mediterranean Frittata

Ingredients

  • 1 Tb olive oil
  • 1/3 C mushrooms, finely chopped
  • 1/3 C onion, finely chopped
  • 1/3 C zucchini, finely chopped
  • 1 tsp garlic, minced (bottled is fine)
  • 1 C spinach, finely chopped
  • 1 C marinated artichoke hears, finely chopped
  • 1 C feta cheese crumbles, divided
  • 12 eggs
  • 4 Tb half and half
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat your oven to 425 degrees.
  2. Grab a medium sized mixing bowl and whisk together the eggs, half and half, salt and pepper. Stir in half of the feta cheese and set aside.
  3. Grab a 12 inch oven safe skillet and heat it up over medium high heat.
  4. Add your oil and when it's hot add the mushrooms, onions, and zucchini. Sauté until crispy tender. Should only take a few minutes.
  5. Add the garlic, spinach and marinated artichoke hearts. Cook just until heated through.
  6. Pour the egg mixture over the top of the veggies and give everything a nice stir to combine, making sure the veggies get distributed evenly.
  7. Allow it to cook for just a minute or two, until the outside edges begin to turn lighter in color. Carefully transfer the pan to the oven and allow it to cook for 10-15 minutes or until the center of the egg mixture is cooked through.
  8. Remove the pan from the oven and allow it to sit for just a few minutes.
  9. Slice and serve, add fresh tomatoes on top if you choose.
