Yokon Gold potatoes are sliced super thin and added to a skillet with…

…sliced onions. They cook for a bit, allowing them to get a bit browned.

Broth and seasonings are added, the pan is covered and potatoes simmer away in all that flavor.

Next we add a bit of butter, cheese and half and half. Just look how creamy and cheesy they are!

Skillet Au Gratin Potatoes

Ingredients

  • 4 large Yukon gold potatoes
  • 1 1/2 C water
  • 2 tsp chicken bullion granules
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tb butter
  • 1 C half and half
  • 1 tsp cornstarch
  • 1 1/2 C sharp cheddar cheese, grated
  • 2 green onions. chopped
  • 5 slices precooked bacon, chopped

Instructions

  1. Slice your potatoes nice and thin. As thin as you can. 😉 Slice the onions as well.
  2. Grab a large deep skillet and heat it up over medium high heat. Spray it generously with cooking spray and add the potatoes and onions.  Spray them with a generous amount of cooking spray as well. Allow them to cook for 5-7 minutes, stirring occasionally and allowing them to get a nice sear along at least one side.
  3. In a glass measuring cup, mix together the water, bullion, smoked paprika, salt and pepper. Pour it over the top of the potatoes and onions, give it a nice stir and cover the pan. Turn up the heat a bit and allow the mixture to come to a nice rolling boil. Let it cook for about 10 minutes or until most of the broth has evaporated and the potatoes are tender.
  4. Add the butter and stir.
  5. In a glass measuring cup stir together the half and half and cornstarch, making sure the cornstarch gets well disolved. Pour it over the top of the potatoes and stir it in.
  6. Sprinkle 1 C of the cheese over the top and stir well until the cheese has melted and is well incorporated.
  7. Remove from the heat, add the remaining 1/2 C of cheese, green onion and bacon. Cover the pan and let it melt.

Serve and enjoy!
