Hello everyone and Happy St. Patrick’s Day Weekend, if you are celebrating. I can honestly say that it’s one holiday that doesn’t get much attention around here. I did, however add a delicious Creamy Lime Pie to the menu plan this week…because it’s sort of green. Does that count as a celebration? If you make it…I can assure you, it will feel like one. It’s so good.
I’m especially excited about the Singe Serve recipe I brought along to share with you today. I’ve been having it on repeat over the past couple of weeks, it’s amazing, fast, hearty, filling, loaded with protein and so, so delicious. I hope you are enjoying this new addition to the menu plans. I can see that many of you are making them (especially the Banana Bread Oatmeal for One) and that makes me happy. It’s been fun to let my creative juices flow, after developing recipes for families for almost 15 years, it’s fun to try something a little bit scaled down.
